Apricot, Orange & Lemon Tarts

Oh my goodness, I could smell the orange and lemon in these even before they were cooked. This mixture makes 12 Tarts and one 8 inch wide dish. 

You'll need the following ingredients for this recipe:
4oz Sugar
4oz Butter
3 Large Beaten Eggs
1 Cup of Ground Rice
1 tsp of Baking powder
Grated rind from both an orange and a lemon, 
(plus the juice from half of each)
Jam of your liking, I'm using Apricot because it goes really well with the orange and lemon.
1 pkt of short crust pastry
3/4 cup of Ground rice
3-4 cups of Self Raising flour (add slowly)

To make the filling...

First, beat the sugar and butter until it's smooth and creamy. Then add the 3 eggs, one at a time and sprinkle in the orange and lemon rind and mix well. 

Next, add the ground rice and mix, then finally add the flour slowly until the mixture is creamy, you may not need to add all the flour, it depends on which flour you're using!

Now to the pastry, if you're using shop bought pastry, then all you have to do is mix it with some cold water, a bit at a time until it forms a soft dough, not sticky mind...


Cut out 12 circles and place in a greased bun tin, even if you're using a non-stick tin, you still need to grease and flour it as shown below for the large tin.

 

Once the pastry is in the tins, bakes for 3 minutes, then remove from the oven and add the jam as I've done below. For the large tine simply spread the jam across the base and then fill with the remainder of the mixture. Once the bun tin is complete, it leaves the right amount for the large tin. 


It should look like this below  when it's ready for the oven, bake on Gas mark 7 in the centre of the oven for 15-20 minutes or until golden brown. Don't forget to sprinkle some of the rind before and after the tart has cooked...



If you like, you could eat this with Ice-cream, whipped cream or as is! They are simply delicious however you have them :0)
