Bacon Pork Pie My Way

These Bacon and Pork Pies are really yummy and great for a snack if you're hungry. They're so easy to make as well... So let me take you through the process. First of all you need to add 100g butter (not fat) and 100ml of water to saucepan and bring to the boil. 

Next, weigh out 285g of plain flour and a good pinch of salt and add these to a medium sized dish. Mix together and then slowly add stir in the hot mixture.

Your dough should look something like this above! When its mixed together, you must knead the dough while it's int he dish until its smooth. and then leave it to cool for 2 hours.

Once the mixture has cooled, knead it again but this time on a floured surface and cut into sections depending on what it is that you're going to make, either a large pie of small pork pies etc.


I like to make both so I actually do a double batch, that way I have enough for bough the pork pies and a large pie.

Don't use cutters etc, this recipe needs your handy work lol. If you've cut 6 sections to use for the pork pies then using your fingers only, manipulate the pastry to fill the sides of the bun tins and then bake for 20 minutes, or until they start to turn golden but don't cook them through. When the edges are browning, take them from the oven and leave to cool.

Now for the filling:

In a frying pan add salt & pepper, butter, seasonings, chopped chives, and 1/4 spoon of beef or pork stock jelly. I actually use the Knorrs ones as they are filled with yummy flavour. 


Now add some pork chops, I used two in this meal, cook them until they start to go golden brown and turn them several times in the juice you've created. When they're cooked enough, remove from the pan and leave on a chopping board to cool.


Once cool, you then need to chop them into small pieces and return them to the frying pan to cook for a further 5 minutes, then reduce the heat to a simmer for a further 10 minutes.


Add some grated parmesan cheese into the part cooked pie crusts and and fill them up with the chopped pork and then add a slice of smoked bacon on top. No need to roll out the lids, just cut some of them pastry into 6 pieces and then using your fingers, flatten and manipulate the pastry to fit the pies. Don't forget to brush the edges with a beaten egg to help the lids stock down.


All that's left ofr you to do is to brush the tops with some of the beaten egg and using your knife, slice the tops about 1/4 of an inch for the steam release when they're cooking and hey presto, you've created your very own pork pie. You can add some hot gelatine if you like but I don't like it personally so I rarely use :0). Now enjoy!
