Delicious Chocolate Mousse & Whipped Orange Cream
Here are the ingredients: One large orange, one cup of coffee (no milk), two egg yokes, two cups of chocolate chips, and a pinch of salt.
I can't help it when it comes to deserts, though I don't have a sweet tooth, and I don't, I do however love a good pudding... I also have cravings for chocolate at times lol.
This recipe has three parts, the chocolate flakes which I'm going to make. The Candied Orange Peel! No shop bought goodies here you know :0). Lastly, the Mousse itself.
To make the chocolate flakes, all you need is some grease proof paper and melted chocolate. I used Milk chocolate and melted it in a dish over a pan of hot water. Once it was soft and running, I simply poured it onto the paper and spread it out with the back of the spoon as evenly as possible. Then left it to set, once this processing had started, I then placed it into the freezer to harden. You can take it out several minutes before you need it and then chop it up and decorated your puds. I've actually used grated chocolate for the topping.
Next, I'm going to make the Candied Orange Peel.
To a sauce pan, add 1/2 cup of sugar and 1/2 cup of water and boil together. Peel a large orange and slice it thinly, then add the orange to the syrup. Turn the heat down and simmer the mixture until the oranges become translucent, I then added some of the juice from the orange as I didn't want to waste that lol. This may take anywhere up to 30+ minutes. You do have to stir it now and again!
Don't waste the syrup either, after you've removed the peel, pour the syrup onto a nonstick parchment and spread out, then leave to harden and then break it apart. It will look like this as it dries, now it can be used for sprinkling on as toppings! Remember that it will taste of oranges.
After removing the orange segments, drop them in a bowl of sugar, making sure that they are all completely covered in sugar and then leave on a dry surface for when you need them.
These will keep in the fridge for several days! Now to the Chocolate Mousse.
You will need 12oz of Chocolate chips, and 4 large egg yokes. These need to be blended together and add a dash of salt. Add 2 tsp of orange liquor (I didn't have this, so I used the juice from one whole orange that I'd just peeled). Add two cups of whipped double cream and stir well.
Next, add one cup of ready made coffee, no milk. Blend all the ingredients together until smooth and add the mousse to you serving dishes. You can layer the mousse with more whipped cream and finally, top with your homemade treats. Now place in the fridge to set for later.
Whip up 2 cups of double cream until nice and thick, add the juice of the orange and then place scoops either on top of the mousse and or layer as mentioned above!
Notice how I've used some of the hardened broken syrup from the peel! Plus I added one Raspberry for colour but it could have been a slice of orange :0)
