Delicious Chocolate & Walnut & Cinnamon Biscuits


First of all, in a medium sized mixing bowl, add the following ingredients: 1/2 cup of butter, 1/2 cup soft brown sugar, 1/2 cup granulated sugar and one tsp of vanilla extract and then one egg. I've actually added an extra ingredient, only because I love the taste of these biscuits when baked, so continue to add one tsp of cinnamon. Mix all the ingredients together until creamy.


Next you need to mix the dry ingredients together, in a bowl or a pan, add one and 1/4 cup of plain flour, 1/2 cup chocolate chips, 1/2 tsp baking soda and 1/2 tsp of salt and a cup of chopped walnuts together with one cup of chocolate chips.


Mix all the dry ingredients in increments to the first mixture, until you form a soft doughy mix, then scoop out a small amount onto a baking tray. You DO NOT need a heap scoop, I use the smallest of the ice scoops as the biscuits spread quite a bit once baked.


This was an 8 inch cake tin and as you can see, I've only added 3 scoops to it because of them spreading like they do. Sprinkle a little sugar over the mixture, you do not need to pat them down as the flatten well as they cook.
Bake in the centre and the top of the over for 8 minutes and then switch them around for a further 3 minutes until golden brown. Once they're cooked, leave them in the trays or you could add them to a rack to cool. I've already tasted mine before they were cold and oh boy, you're gonna love these!
