Fabulous Boil In The Pan Fruit Cake

If you've never tried eating a fruit cake with ice-cream then you don't know what you're missing, especially with this particular cake! It's crunchy, fruity and yes you can taste the lemon and orange in it.


I'm sorry, but you really can't go wrong with this fabulous fruit cake, if I didn't need to show the ingredients to you, I wouldn't need to use so many pots and pans! You would only need a large pan, your measuring spoons and a spoon to mix...


Here are all the ingredients that you need to make this yummy cake: One cup of mixed dried fruit, one cup of soft brown sugar, one cup of butter, one cup of chocolate chips, one cup of milk, the juices from half a lemon and half an orange. one tsp of vanilla essence, pinch of salt, one tsp of baking powder, and the rind from the lemon and orange. Crush one cup of nuts of your choice, four to five cups of self raising flour, and finally 3 large beaten eggs.

Save some of the rind for garnishing at the end

Add all the ingredients to a large cooking pan (but not the eggs and flour yet), bring to the boil and simmer for 10 mins, stirring all the time so nothing sticks to the pan!

Now add the eggs and stir well, then add the flour a scoop at a time while stirring

If you have a grinder, grind the nuts until they are smallish in size, but chunky enough to feel when you take a bite of the cake...


Pour/scoop the mixture into lined 12 inch wide square cake tin and bake at Gas mark 6 for 1 hour minutes. Keep your eye on the oven and do not open unless you have to during this cooking process.  When 40 minutes are up, check the middle of the cake by gently touching the centre, if soft in the middle, continue to cook for a further 20 minutes and then test it again. You should be able to see when its completely cooked by using a sharp blade in the middle, if its not sticky, then it's cooked.

Now don't knock it until you've tried it lol, but this is how we eat it!

Remove from the oven and lift the cake from the tin, if you've left enough of the nonstick paper over the edges, this will be easy to do. Otherwise, I would leave it in the tin until its cooled down! Once cool, remove it and the paper and make yourself a nice cuppa, cut yourself a chunk, put your feet up and enjoy!
