Succulent Chicken and Mushroom Pie

I love making pies, especially when the pastry works well! Here it wasn't that hard as I used store bought Puff Pastry, so it's light and crispy.

This particular pie is a favourite of ours, it's filled with succulent chicken and tasty mushrooms, plus other ingredients. First of all, drizzle some Olive oil into a frying pan and add a little butter, add salt and pepper. Then add a diced onion, chopped chives and some butter beans, then add chopped mushrooms. Don't skimp on the ingredients, you'll have to guess how much of each depending on the  size of the dish you're going to bake it in! Now add a pinch of dried mustard (optional) and stir well. 


Fry until golden brown and then add a little water and bring to boil, remove them with a sieve or a spoon with holes, as you'll need the juices for the chicken. Place the sauce into a dish and put to one side for now.

Next, add some butter and a little more oil, add the chicken pieces whole, let them cook on both sides until they start to turn golden brown, turn the heat off and place the chicken onto some kitchen paper, once they've drained, place them onto a chopping board and cut into small pieces.


Now add all the ingredients back into the pan, the chicken and the vegetables and add about a cup of water with a sprinkle of gravy granules, just to thicken the sauce. You can taste the sauce to see if you want to add anything else to it, but generally I don't add anything else as its all quite tasty...


Serve with potatoes and some green vegetables like Broccoli and peas etc!
