Super Light Focaccia Pesto Bread

First of all, add some fresh butter to a frying pan and then add one tablespoon of Basil Pesto, one tablespoon of Tomato Pesto, a pinch of salt and pepper, and then a tablespoon of honey and the last ingredient, table spoon of crushed Garlic and stir well. 



Brush some of this mixture all around the edges of a baking dish and then drip some into the base and spread it all over.


Now to the dough, add a cup of warm water to a bowl and add one tablespoon of dried yeast! Next, add a desert spoon of Honey and mix well and leave to one side for 5 minutes.


When the yeast mix is ready, you need to add to a mixing bowl one cup of flour (plain), and a 1/4 cup of the Pesto mix that you've just made.

Start to bind these together and then add a further cup of flour and the yeast mix. Mix to a soft dough and then flour the deck ready for kneading. Once the dough is ready, knead it for 2-3 minutes and then place the dough into your ready made dish. Make sure you pit the dough once you've spread it around like I have below, just push your fingers into the dough. Brush with the remaining Pesto mix and add some chopped Chives.

 Bake on Gas mark 7 until golden brown and serve with any meal that you prefer hot or cold. I served mine with my Creamy Cheese & Pesto Mushrooms... yummy :0)
