Sweet Lemon Swirls


Once you've added all the ingredients into the saucepan, cook on full medium heat until the whole mixture bubbles. Now remove it from the heat and let it cool down. Once it's cool, you can then add the rest of mixture to it. But first you'll need to add these ingredients into a bowl:

2 cups of whole milk, 1/2 cup of olive oil, 1/2 cup Sugar and heat these ingredients until the bubble. Once the mixture is bubbling, add 1/2 tsp of cinnamon and stir well, then remove from the heat and leave to cool.


Now that its cooled down, add two and a 1/4tsp of dried yeast and 4 cups of flour, stir well. Take the dough into your hands and kinda make a ball and then pop it into a bowl to sit until its risen, cover it with a dry cloth. 


After an hour of sitting, you need to take the dough from the bowl and knead it for 5 mins. Then roll it out into an oblong-ish shape and cover it completely with melted butter, heated Lemon curd (don't burn yourself here) use a palette knife to spread the jam! Sprinkle some cinnamon all over it and then add a sprinkle of soft brown sugar. 


Start to roll it from the side furthest away from you until you have a swiss roll shape and then slice into 1/2 inch thick pieces. The expand well but you can place around 20 on a tray measuring 12 x 18 inches.

Make sure you took the ends in!

Bake on Gas mark 7 for 10-15 minutes or until golden brown, then remove from the oven and sprinkle some icing sugar over them and leave them to cool.
