Twice Baked Stuffed Potatoes
Yes, these are baked twice and taste delicious



Of course the amount of filling that you're about to make, does depend on the quantity of potatoes that you use. Because there is only two of us eating today, I'm using 3 small potatoes (makes 6 halves, that's two days meals sorted). First you need to prick the skins with a fork and slice them in half, then rap the tops with foil as shown below. 


Bake them on Gas mark 7 until they are soft (approx 30 minutes, may take a little longer depending on the size of the potato) or, you can bake them in the microwave for 10mins (without the foil lol). Once they're cooked, take them from the oven, leave to one side until they cool down enough to handle, then scrape out the potato into a large mixing bowl and set this to one side.

I cook them in halves because it's quicker and does them no harm!

Fry and chop some streaky bacon or whichever bacon you have in.

Next, chop up some fresh chives or you can use dried. Chop 3 1/2 peppers, I used green, yellow and red for colouring.



Add the peppers and bacon together and return to the frying pan, or a hot plate as I've done here and sprinkle with salt, pepper and a tablespoon of green or red Pesto (or both). Continue to fry until the peppers are cooked to your liking.

Returning to the potatoes, add a drop of pouring cream, salt & pepper, and a little fresh butter, mash them together until creamy. Then add in the cooked peppers/bacon mix.


Stir well

Now add in one whole cup of grated cheese and one half cup of soft cheese of your choice. Mix together and spoon back into the potato skins.

Add some more grated cheese on top and a few cut chives and return to the oven on Gas mark 7 for 10-15 minutes.



Once cooked, take them from the oven and sprinkle with more  freshly chopped chives. These can be eaten as is, or choose a couple of roasted veggies, like broccoli and carrots etc to go with them. They really are filling and taste sooooo good!
