Walnut Toffee


Toffee's are great to make, they are delicious and you can turn a simple toffee mix into several different flavours with various textures!

Here I turned this plain toffee into a Walnut toffee and I'l certainly enjoy munching it when I need that sweet fix lol. 


Ingredients:
2 x 1/2 cup of sugar (one 1/2 to caramelize)
1/2 cup of thick cream
3 Tbsp honey
3 Tbsp butter
1 tsp vanilla essence
Pinch of salt
Crushed Nuts

Caramelize 1/2 cup of sugar in a saucepan.
When it's bubbling, add 2 Tbsp of water (be careful as it will spit out with the heat)
Add 1/2 Cup of cream and stir well until it bubbles again.
Add the second 1/2 cup of sugar and boil until the colour changes.
Then add 3Tbsp of honey and stir gently.
Add a pinch of salt and stir.

Keep stirring until it's bubbling again and then add 3 Tbsp of butter and when the texture becomes creamy like butterscotch, take it from the heat and pour it into a greased flat tray. Tap the tray to make sure that the any air bubbles rise to the surface and then leave for at least 2 hours to set. This is where you can add the nuts of your choice etc...  or, when it's almost set, use a knife to mark out where you want to chop the toffee, but I generally just crack it with a toffee hammer!
