Creamy Mushroom & Potato Soup


Soups are relatively easy to create, you basically add all your favourite ingredients and then blend them to a pulp and hey presto, you've made soup! But for those who are not sure or have never made one before, this will help you create a simple but lucious creamy soup...

In a frying pan, add two cups of chopped Mushrooms and 2 cups of diced Potatoes. Add a good pinch of Salt & Pepper and any other ingredients for taste as you like. I love to taste the mushrooms more than anything so I don't over do it on the seasoning, the only other one that I added is a cube of beef stock. Yes I said beef, its the flavour mix in with the fresh mushrooms that is so delicious!


Once these ingredients are all on the boil, turn the heat down to simmer until the potatoes are soft, this may take approx a further 15 minutes. When ready, remove from the heat and transfer it all into a large dish and using an electric blender, blend all the ingredients together, then pour in one cup of single cream and stir.


This is now ready to serve, once I've added some to a dish, I add a sprinkle of chopped chives, mainly for decoration.
