Fluffy Light Jam & Coconut Tarts

Ingredients:

4oz Softened Butter

4oz Sugar

4oz Coconut Flakes

3 Eggs

6oz Self Raising Flour

Jam

Mix the butter and sugar together until it becomes creamy and light in colour. The add 4oz of coconut flakes and stir well, now add the eggs and mix well before adding the final ingredients which is the flour. Add the flour in by the spoonful until the whole mixture looks like that in the picture below!

Pastry:

I used shop bought shortcrust pastry, but you can make your own...

This mixture will make 18 tarts. 

Once your ready with the pastry, add a tsp of Jam and spread it around the middle of the pastry. The using a medium scoop, add one scoop to each bun section and bake on Gas mark 7 for 15-20 minutes.
